I have a bride that wants 200 minicakes instead of cup cakes on a tower, I have never done mini cakes, can anyone tell me where to start?? What kind of pan to use and what would you charge??? She wants them covered in fondant too. Thanks

A couple of options here, you can buy mini pans, or bake in sheet pan and cut out with a cookie cutter. You have to charge more then cupcakes, you will be using a lot more fondant for one thing, and a lot of time. We do them in a 2' pan, more batter is needed then for cupcakes. We made 10, took everything into account and priced from there. When you add it all up, the bride might opt for cupcakes.

I did 6 dz of mini cakes recently and it was far more labor than a large tiered cake. It is more difficult to cover each one in fondant and then the mini decorations are so detailed that it takes forever to do them and I was suprised to find out that I used more quantities of ingredients than anticipated.
As far as pricing goes it should not be compared to cupcakes. The end result is worth it as they look very elegant and I understand why someone would be willing to pay for it.
