My Beautiful Failure
This cake, the exact design and all, was made twice. This one in the picture was put together in 6 hours, after the first collapsed onto my dining room table. I think this was my best cake I've made so far. Unfortunately, between taking the pictures, boxing it up and transporting it to the client, it collapsed again. I was devastated and so was my client. I gave her a full refund and offered another future cake free of charge, in an effort to gain her confidence in my ability. That's all I can do. I've learned a valuable lesson, the hard way. There was also a beautiful cross I made to go on the top. I didn't get a chance to take a picture of it. Luckily it wasn't damaged since it was boxed separately and I was able to place it on top of the 6" tier which wasn't too badly damaged.

Mardi Gras Cake
New things: fondant feathers (so difficult to stay on, as they were a bit heavy), fondant mask (ultimately not used as it dried a bit wider than could fit on the hat), top hat (holy cow was this thing hard to cover in fondant. thank goodness for the yellow "ribbon"), IMBC under the fondant (not sure what happened but it didn't seem like the fondant like the IMBC. the fondant got very wet and melty) Not so new, but learned something: using fresh strawberries with strawberry jam/preserves in the filling seemed to water it down by placing in the fridge and freezer and then thawing out again. most of the filling was soaked into the cake On the upside: this was a cake I made for my husband and I to celebrate our wedding (February14th with the town judge)

Monkey Cake
This was the first time I tried the buttercream transfer method. I LOVE this method!! Next time I have to make sure the background icing on the transfer matches the icing on the cake exactly. I eyeballed it this time. (oops) I did it for a birthday cake for my girlfriend who loves monkeys. This is also the first time I tried using the acrylics to get that nice sharp edge. I won't ever ice a cake without them again! Oh and another first time...hand lettering without piping gel. I'm getting better. I'm just so nervous that my hand shakes!

Learning New Things
This was a cake I made for my mom's birthday. It was the first time I tried making sugar lace, using a recipe off of CakeCentral. It was also the first time I covered a cake with chocolate ganache. Lots of learning here...and lots more practice needed. The cake was chocolate with peanut butter frosting. The whole thing tasted AMAZING, just could have looked a little neater.

My First Frozen Cake
The top tier is a dummy. The figurines were supplied by the client. Olaf was handmade with fondant and gumpaste. By the time I was done with him, I thought I would be cross-eyed! He was so small! Chocolate cake and strawberry filling. Had fun using the airbrush, especially on the number.
