These Guinness chocolate cupcakes with Baileys buttercream frosting are a great way to celebrate Saint Patrick’s Day or just about any other gathering with friends!
Guinness chocolate cupcakes Ingredients:
1 cup Guinness beer (240mL)
1 cup unsalted butter (240g)
3/4 cup cocoa powder (75g)
2 cups all purpose flour (240g)
2 cups sugar (400g)
1 1/2 tsp baking soda
3/4 tsp salt
2 large eggs
2/3 cup sour cream (160mL)
Bailey’s buttercream frosting Ingredients:
3 to 4 cups icing sugar (300g-400g)
1/2 cup unsalted butter (120g), at room temperature
3 to 5 tbsp Baileys Irish Cream
To send these right over the top, fill with irish whiskey-spiked ganache filling.
I also add the baileys to my chocolate mousse recipe and use it to fill the cupcake. Then dip the top of the cupcake in ganache. GADS its good.
