I was wondering how to make a raspberry buttercream icing. Would I put some seedless raspberry jam in.... Is there one for a merengue buttercream? I don't think I can find raspberry extract. Thanks.

Either McCormick or Adams Extracts make a raspberry extract, which I've seen at WalMart. I have also experimented with the DaVinci & Torani coffee syrup flavors, which work well. I used the White Chocolate & the raspberry, it takes a little more, but tastes great! HTH!

I like to add the seedless preserves myself, just to taste.

i've used mccormick's raspberry extract in my buttercream before. it tasted good, but i thought a little strong. next time i think i might try using half raspberry and half vanilla to tone it down a bit. i could only find mccormick's brand at a Remke grocery store though. for some reason no one else in my area has it!

I add Frans Raspberry sauce in a small amount, like 1 Tablespoon to a batch of IMBC and also puree fresh berries to remove the seeds and add those as well. That is just for a filling, it would have too much texture for icing a cake.

Could I just put some seedless raspberry jam in IMBC without ruining it... when to add and how much?
