Spice Cake With Apple Filling???

What does everyone think of spice cake with an apple filling? I have a co-worker that loves apple pie, but I want to make him a cake, so if I could incorporate apple some how in the cake??? Or if anyone has any ideas I would greatly appreciate it so much!!!

I've made 3 spice cakes with fresh baked apple pie filling. It is out of this world! may I suggest the Whipped cream frosting on this site. Here's the link.

It is the most wonderful combination I have ever tasted. Keep in mind, you cannot pipe or pipe onto this frosting, but if you check out these photos, here is what I did to two of mine. I don't have a pic of the third.

That's what I made for my wedding cake. Well, half anyway. The other half was tiramisu. Apple spice is my fav and tiramisu is hubby's fave.
I made one for Thanksgiving and it was very yummy. I did a spice cake mix with the cake mix extender and cream cheese buttercream that was made from the hi-ratio shortening recipe, and i added some apple pie filling in the middle (picture is in my photos). The problem I had was that the center was starting to bulge.
Thanks for the replies. I didn't have a chance to check back on to see what anyone said. So I ended up making a plain white cake. But I am going to try one this week. Thanks so much for all your help! I will let everyone know how it turns out!
