

Red is a complicated food coloring; they are constantly changing the formulation. Back in the fifties, they used lead compounds for painting red hues, without realizing how toxic lead was. Red is also a very unstable color; it gets easily degraded by light and heat. If you see an old poster, the first color that lose its shine and bright is red. I also find people who tells me not to use red food coloring in cakes since their children are allergic to it...Some people recommend using little, since some red food colorings add an unpleasant bitter taste to food. It might be someone realized they have been using a chemical substance to make the red colors that causes allergies, severe reactions, bad taste, etc. and they change it once more! Patience my dear.... Also, the overall quality of goods is going down the hill!

Now boss, when you say allergic is like what? Swelling, itching, sneezing, rash, vomiting, hyper?... I never asked that friend of mine when she asked for a red dye free cake... I'm just curious how is that allergy to food coloring goes?

yes hyper -- he broke out in hyperactivity -- when he was five yrs old I put him on an elimination diet where he ate only 'safe' foods for a couple weeks or so -- and then one by one a suspect food is reintroduced and you wait & see if there is a reaction -- time-consuming but this kept him off Ritalin for all his school years until college --
I learned that foods high in salicylates, iced tea, apples, tomatoes, etc. I learned that after a second helping of those foods, I would have to peel him off the ceiling if I could catch him -- so to keep it easier, I just never fed him any of those foods --
surprisingly redfood coloring in those days was in lots of different foods too -- cake mix, chips, etc.

Ma'am that sounded spooky...I bet most moms out there never even imagined that all the trouble was because of a simple red velvet cupcake the kiddo had! Good to know...That is why I love you boss, always willing to make a sacrifice to make the life of others worth it!

Yes on using powdered food colors. They are so versatile and can be used in so many things. just be sure to smash them to a fine powder so you don't get lumps. The easiest way to do this is with a tiny touch of shortening / Crisco and mix it up like you see painters do on their paint pallets. Then you can add this to candy coating, white chocolate, frosting, batters etc. and it will blend in nicely and make a richer darker color.

yes i was floored that something like certain foods could have that great an impact on hyperactivity -- the issues compounded for him if he had iced tea to wash down the cupcake --
