I have to do a grooms cake.  I'm using my red velvet cake recipe that calls for cake flour.  I need it to be sturdy yet still moist.  Can I change the type of flour ? Or do you have any other suggestions?

You can interchange the different types of flour. Substitute for the same amount based on weight, not volume. Cake flour weighs about 4 ounces/113 grams per cup. All-purpose flour weighs about 4-1/2 ounces / 128 grams per cup. If the recipe were to call for 3 cups of cake flour, that would be 12 ounces / 339 grams. An equivalent amount of all purpose flour would be 2-2/3 cups.
