Freezing Pumpkin Spice Cake

I freeze cakes, haven't kept frozen past one week but never have frozen a pumpkin spice cake so wondering if freezing a pumpkin spice cake is okay to freeze? Also do you think safe to keep frozen for 2-3 weeks? I know some say cakes are safe frozen for a month, I just haven't gone that far. Always concerned. Thanks in advance.

Of course you can freeze a pumpkin spice cake, just the same as any other sponge.  If  properly wrapped, cake can remain frozen for many, many months without loss of flavor or damage.  Wrap the cake in two or three thicknesses of plastic wrap, then finish with a layer of aluminum foil or zip loc freezer bag.  I always thaw my frozen cakes in the refrigerator.

Definitely!  I have kept some for 3 or 4 months   As Sandra said wrap the layers in several layers of plastic wrap   If planning to keep longer than 2 months add a layer or two of aluminum foil   Best to put a finished cake in a cake box which is wrapped in plastic   Believe me it will be as good or better than keeping it in the frig & far better than leaving it on the counter:)   Didn’t be afraid to freeze!  It will make things better/easier for you
