who was it that advised to use freeze dried strawberries in their strawberry cake recipe? you are a genius -- I used it for a strawberry filling -- just whirled in blender and added it into the abc and it was perfect -- I didn't want to fridge the cake because it was made with butter so I finally tried it to resolve that issue and avoid flavorings at the same time as well --  really potent too --

I've got to give it a try.  I do have some pineapple, but can't remember what recipe with which I was planning to use it....old!

I have used the freeze dried strawberries in my strawberry cheesecake... looks and tastes amazing...

I've seen freeze dried strawberries used too but where do you get them? Do you have to order them on-line or is there uh an actual store lol?  I've been wanting to try them in something too...

We absolutely cannot get freeze dried fruit of any kind here in Canada where I live. Oh sorry, ya Costco, if there available. $79 CAD for 2/6 oz packages. That’s not happening anytime soon. Lots of dried fruit tho, so I’ll stick to that.

Wow that is crazy expensive jchuck!  I just broke down and ordered a 3-pack sample of different dried fruits from Amazon for 17.99 (US) 

I had some other things I needed to order for my office so I used that opportunity to get that too!

I have no idea why it’s so hard to find freeze dried fruit here in Canada???  Very weird. Upon a wider search, I found some at specialty shops next city over. But still very $$$.

Oddly enough, the Dollar Stores in our area carry bags of freeze dried strawberries and apples (and occasionally bananas)...

Just remember, freeze dried is not the same as dehydrated.

Correct gscout73   Freeze dried fruit are much more potent and flavourful. I can only get dehydrated fruit here. But it does the job!

For a typical cake recipe, how many ounces of the (pulverized) fruit did you add? Or was this just for icings and fillings.

one bag is enough for a full recipe of icing i'm sure -- the fruit turns into a powder when you blend it -- it comes out of the bag brittle and dry --

oh whoops I used that amount in some icing  i used as a filling — i’ve never baked with it — but still I don’t think you’ll need more than one bag but I would get two bags because I like back up

I have used freeze dried strawberries for cakes many times.  It is the only way I could get a nice strawberry taste, and pretty color, and not add moisture and denseness to the cake.  (Freeze dried NOT dehydrated!) For my white cake recipe that makes 2 8"  layers, I mix in a heaping cup of chopped freeze dried strawberries, including all the powdery bits, at the end.  I chop small, so that little bits of fruit are visible (it softens up  perfectly while baking) but not too chunky.  If you are not vegan, replace 1/8 cup of the sugar with 1/8 cup dry strawberry jello mix for a pretty pink color.  Also, add in 1 tsp of strawberry extract along with the vanilla.  I get the strawberries at Trader Joe's, and also my local family owned grocery store.

I wish I could take all the credit, but I got the idea from someone years ago on CC (wish I could remember who it was) and I just played around with it as part of my many trials for the best strawberry cake.
