I followed this recipe: https://sallysbakingaddiction.com/yellow-birthday-cupcakes/#tasty-recipes-70798

Except i halfed everything. I don't have a paddle attachment, so i used my regular beaters. The cake never browned. Its super soft but dry. What am i doing wrong? What Did I Do Wrong With My Cupcakes? What Did I Do Wrong With My Cupcakes?

Don’t know that recipe but sounds to me like your oven might not be working right   Do you have a thermometer in it?   Are you sure it was right on temp?

She is very active on her page and responds to questions, you should ask her, and maybe she can help you figure it out. My vanilla cupcakes don't brown, and that's ok. If they're dry, maybe they were over baked slightly?

Thank you both so much. I did redo them. I weighed the dry ingredients and cooked at same temp but for less time. They are already tasting better. I'm going to buy an oven thermometer today and I will message her as well. Thanks, again.

You're welcome. Definitely yes to an over thermometer. My oven runs 15-20 degrees hotter than what it reads, and I had no idea until I got one lol Hopefully she can help you out!
