
I'm making a buttercream wedding cake and the client wants fondant butterflies on the edges of the cake, like in this picture. I'm not setting it up at the venue so i have to have all the decorations on when she pics it up. How can I securely attach them so they don't fall off?

Oh Lordy. Is she renting a cake delivery box from you or anything?
I would insert wooden skewers in to bottoms of the bodies of the butterflies and then insert those into the cake.
It makes me really nervous handing over a cake like that...if it were for a friend i would probably angle milkshake straw dowels into the sides of the cake where i want to place them and then tell her to insert he butterfly skewers intocthose places upon arrival...but for a customer, i don’t know!
I would have her sign a waiver that she assumes all responsibility once she takes the cake into her possession.
im sure the wedding cake experts will chime in soon...they’ll probably have much better ideas than I!!


pipe a nice cushioning little glob of buttercream on the cake and sink the butterfly into that -- or use piping gel -- and when you make the butterflies -- keep the wings thin so they are light weight and make them with a thicker fondant tab underneath coming off the body that you can stick into the cake -- you could even dip those tabs into white chocolate so they won't absorb moisture this would be very secure --
it's easy to make those -- i'd give her at least an extra one for each of them on the cake -- to replace if they fall off -- box them up securely --
i'd knead a good amount of cornstarch into the fondant so they dry nice & crispy -- be sure you crisp them to completely utterly dry before dipping in choco -- because otherwise they are going to absorb the moisture from the icing -- the extra butterflies will make up for any booboos --
I hope the client takes this directly to the venue -- go over the driving directions meticulously -- and box it completely -- tell them no stopping on the way to venue!!
