Freezing A Cake With Cannoli Filling And Whipped Icing?

I’ve made a layered cake filled with cannoli filling which also has chocolate chips and a few chopped up maraschino cherries in there. I iced the cake using Wilton’s icing powder mix for the first time. It tastes great and I wanted something lighter to compliment the richness of the cannoli filling. The cake isn’t due until Saturday, today is Thursday. Im nervous about leaving it in the fridge for nearly 3 days even though it’s a stabilized whip. Do you think freezing it will make it soggy? Cannoli filling tends to condensate when thawing and also the cherries. I feel like I don’t have much choice because today’s the only day I can assemble and decorate the cake. Please help!!! Lol

take your leftovers, cake, filling and icing -- freeze it for a couple hours and then thaw it and see how it does -- the area around the cherries might be a little soggy -- idk



The icing is tough to work with. As you can see, I didn’t get clean lines and I couldn’t go back and fix it because the icing gets weird if you go back, hard to explain. I won’t know about the sogginess until they cut it open but so far so good. It’s holding up well in the fridge
