I mix slow and try not to over mix. My cake layers show air pockets, and I feel not a dense cake, too soft. What am I doing wrong, The last cake I tried a doctored Duncan Hines White cake mix. Egg whites, pudding added. I would love my cake to look like the one here on the left. Any good recipes for a denser cake?

One tip is to bang your filled cake pans on your counter right before you put them in the oven.  Works every time, regardless of the recipe!  If you are making a scratch recipe, try sifting your flour.

you need to use at least a speed four on a stand mixer -- and you can trail a butter knife though your batter to break up bubbles too -- or you could try sieving your batter to burst air bubbles -- but you do have to mix it right to begin with

For years I have banged my pans :)  And I mean bang! them probably a dozen times until no more bubbles come up.  Then one day I got a phone call while in that process and found the bubbles had risen while the pan just sat on the counter (about 10 minutes) and I used a toothpick to break them :)  Now I only bang the pans when I'm in a big hurry to get them in the oven.
