My Cakes Rise And Spill Out Of Their Pans
Baking By Elle_Finn Updated 22 Sep 2018 , 2:21pm by SandraSmiley

Hello,
Does anyone have any idea why my mini-cakes rise and spill out leaving not enough batter to make it to the top of their pans? Here are the ingredients:
190g soft margarine
190g caster sugar
3 eggs, beaten
1 tsp vanilla extract
190g self-raising flour
I'm attempting to make Nancy's Orange Jaffa Cakes from season one of The Great British Bake-Off. Here's the web-page for the full recipe if you're interested: https://www.foodlovermagazine.com/recipes/jaffa-orange-cakes/14412.
The batter is thick and fluffy when I scoop it into the pans and fill the pans about 3/4 full and I bake at what my oven calls 350 for 26 minutes.
They definitely don't look right when I pull them out of the oven but they taste good.
Thanks for reading.

Did you try adding less batter into your pans ? The only thing I can think is your batter is the type that. Rises a lot so for next time maybe try to fill them half full instead of 3/4

I agree with kandyslife, you are over filling your tins. You could add parchment paper collars inside your pans to prevent any spillage and result in a taller layer.
