Does anyone have a really moist vanilla cake recipe, I've used so many recipes and always come across fails and it hurts to throw away cakes so please someone give me something soft and moist. I have a killer chocolate cake and carrot cake recipe but my vanilla cakes never come out as planned. The texture is always hard and bread like even at room temperature (I have graduated from baking and pastry arts so I do know where I've gone wrong). One of you guys have told me to use a Victorian sponge cake, and I want to ask if that is something I should use instead?  I prefer recipes in grams please if you can.

Sorry - I have always used boxed cake mixes but am just posting this to bring it up front so maybe someone else will see and respond.   Good luck.

I use BeyondButtercream’s recipe. It can be purchased on Esty’s. The recipe has paid for itself many times over.

I even pre mix the dry ingredients a week or two before I have to bake. I use unsalted butter and I usually try and freeze it for at least a day.

Good luck
