Good morning! So I hope I didn’t goof up.  Wasn’t even paying attention to the days.  The cupcakes aren’t homemade they are made from box mix so I think I have a couple days leeway there. I have them baked and iced already. I just finished icing them this morning, I baked them last night! They should still be good and ready to eat Sunday early afternoon right?  I used a butter/shortening icing recipe! Is it best to keep refrigerated or just on the counter?

Yup, they should be fine.  I think as long as you keep them in an airtight container they will be fine at room temp.

idk -- thursday to sunday -- that's a bit of a stretch -- would i eat a cupcake on sunday that was baked on the previous thursday wednesday tuesday -- oh for sure -- but for selling or serving to a crowd of some kind -- no i would bake like the day before for cupcakes -- or have already tested out the possibility of freezing them --

i would not do that stretch of time for cupcakes but maybe that will work out for you -- you gotta know you're gonna lose some quality -- but maybe not that much to matter -- i would wrap all those containers in layers of plastic wrap

I baked those late last night, it was like at midnight. So they just will be sitting Friday Saturday and delivering them Sunday at 11:00 AM.

I toss out cookies after Day 3, as well as Pies.   I kinda would not wanna eat a Day 4 Cupcake that had been left out. But...don't like stale taste.  But then, am not partial to box mix baked goods.
