Defrosting Frozen Cakes

I'm baking wedding cakes and freezing them ahead of time. My question is how do I defrost them so no condensation forms on the cakes. I will wrap them in double cling wrap double foil then put in a zip lock bag. Worried about condensation

 forming as they defrost > Any suggestions?Thanks

I actually frost my cakes frozen, then I put them in the cooler overnight...they thaw slowky, there's no condensation ever, and the buttercream is very firm when I'm ready to work.  Never had an issue!! I only cover my cakes in buttercream, though i do use fondant fir accents....but I keep them in the cooler with no issues.

I do the same with an extra step -- when I unwrap -- I have a brush ready to brush off any ice crystals --

and it makes me crazy when I hear someone say they don't unwrap frozen cake and let it sit on the counter overnight to defrost in order to avoid this issue -- and the cake is wonderful the next day -- dude, the condensation sank into the cake 7 hours ago --
