Hi all! My first post here!!

my question was, how do I store a wedding cake before delivery? The wedding is on Sunday, my plan was to make the cake, crumb coat and put in the fridge on Friday, then decorate on Saturday afternoon. The reception is at 2pm on Sunday. They're going to be eating the cake right away.

I was wondering if I should refrigerate the cake until I deliver it, or leave it at room temp? And should I tell the bride to leave it in the fridge 45 mins to an hour before they eat it or is it ok at room temp if I deliver it at 1:30? It will be in the car with a/c for at least 30 minutes to travel to the location.  I am using Swiss meringue buttercream to frost and decorate.

Any help is greatly appreciated! Thank you!

I would keep it refrigerated until delivery time.  If the receiption room is airconditioned, the cake should be fine to be placed on the table 30 minutes prior to serving.

I delivered 100s of wedding cakes at room temp - that was way before the internet informed us how much better (less trouble) cold cakes were.  Yes, as Sandra said, keep it in the frig until delivery time and then it will be fine at room temp.
