Gingerbread For House Construction.

I need recommendations on a gingerbread recipe to build a two story gingerbread house. We live in the Pacific northwest so weather I expect to be wet, not sure how humid but our house doesn't have central heat and is a bit humid. Plus need to figure out total amount of sheet pans the recipe makes. The design has the size of the main walls  close to a entire  pan per side. Think my large pan is 16 by 24 or close to that. Normally this is my table display and won't leave the house.

one very important thing is to use mostly honey and not all molasses because the gingerbread made with honey will not be affected by the humidity like the gingerbread made with molasses will -- i'll try to find a recipe...

i looked for my recipe but i can't find it -- it's here somewhere -- anyway -- this one is very close to it -- but you can melt half the shortening -- then add the rest & stir so it cools off -- gets all liquidy but not hot -- it's real easy to make -- i've made the rialto bridge out of gingerbread and large buildings and tons of other 3-d things --

@K8memphis, thanks for looking. I don't kits and small houses but the pattern my son picked is largest I ever tried to make.
