
Wondering if anyone has a diabetic friendly cake recipe they are willing to share? Our secretary just recently had her gall bladder out & in the process of having blood work done they also discovered she is diabetic. The first thing she said to me was that she was going to miss eating my cake :-( Her birthday is next month so I'd like to still be able to make her a cake. I have made ones with Splenda in the past but it was so long ago that I honesty don't remember if they were all that great or not. I know I can search the internet for recipes but would like to use one that is tried and true. I'd be happy with any great recipe, no preference on flavor.

The only thing that you will need to do is to substitute granulated sugar for granulated maltitol on your favorite recipe. Maltitol is a diabetic friendly substitute that I have been using for years. It is a little expensive but worthy. The equivalent is 1 Cup of granulated sugar = 1 cup of granulated Maltitol. You can buy that online on www.perfectlysweet.com, they are dedicated to sugar free products.

Hospitals serve Angel Food Cake to diabetics... For two reasons (essentially one)... low sugar and low flour... basically low carbohydrates... It isn't just sugar that diabetics have difficulty with... it is anything that breaks down into sugar... flour can be the enemy as well... also alcohol, too much fruit or juice, some breads, pastas and rices...
Whole grains are better than processed because it takes longer to break down into sugar which allows diabetics (and anyone else) to control their blood sugar better...
Diabetics can also still have "regular" cake and icing if they figure it into their meal plan... Typically a small serving...
And if I ever get diabetes, I will not be drinking diet drinks or using the artificial sugars... I rarely drink beverages with any sugar in them anyhow... I just will go without or plan it in... I am one of those lovely people who taste them all and find them unbearably hideous... I can barely handle the xylitol (sp?) in mint gum...
