Hi everyone I wondered if anyone could help me out!!! I'm making my first wedding cake ( not till February) and they've asked me to make a fruit cake for the for one of the layers, I'm not a fan of fruit cake myself! I've been looking for recipes but there's soooo many I'm having a hard time choosing!! I'm not sure wether to go traditional or boiled or what alcohol to choose etc!!! I like the idea of using other dried fruits like dried apricots and dried sour cherries etc and I'd like to be able to make it soon and feed it, if anyone has got any fab fruit cake recipes I'd love to know!! Thanx

I do a fairly traditional fruitcake but it's pretty good!  It's won awards at our little Royal Show here in Perth.

I tend to change the booze that I soak the fruit in just depending on whatever is on hand at the time. My last fruitcake I soaked the fruit in a 50/50 mix of bourbon and Grand Marnier and the clients loved it.  I soak the fruit for about a week or so in its mix before making the cake and then save a little of the booze mix for feeding.

I'll dig out my recipe when I get home  :)

Below is one of the simple recipe:

Soak cherries, mango, cranberries, currants, and citron or your favourite fruits in 1/4 cup rum for at least 24 hours. Next preheat oven to 325 degrees F (165 degrees C). Butter a 6x3-inch round pan or loaf pan and line it with parchment paper. In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan. Then bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.

I never liked fruitcake until I  made this one!

125g currants, 100g sultanas, 100g raisins, 40g prunes chopped up, 40g dried apricots chopped, 40g dates chopped up, 50g glace cherries chopped, 75ml booze (I use about 100ml), zest and juice of a lemon and an orange. Put everything in a bowl, cover it up and leave it for a week. 

I also add a few drops of LorAnn oils (orange or lemon) and one teensy drop of LorAnn cinnamon oil.

175g plain flour, 1tspn ginger, 2tspn cinnamon,1.5tspn nutmeg, 125g butter, 125g brown sugar, 2 eggs (beaten), tbspn molasses, 25g chopped nuts

Sift flour and spices, beat butter and sugar til fluffy, add eggs, then flour. Recipe says to fold but I just run the mixer on its lowest setting until just combined. Mix in molasses, then your boozy fruit and nuts.

Bake on 120C for about 3 hours. This recipe is for a six inch tin.
