Hi all

I am making a cake for a client who would like my white chocolate, rosewater and pistachio mud cake for her wedding. However, a few members of the groom's family have nut allergies so she has asked if I could do it without the nuts.

I have done this before and it does taste nice but is very sweet. The pistachio is great for adding some textural elements and cuts through the sweetness of the white chocolate and rosewater. I was wondering if anyone had any ideas for a non-nut pistachio substitute?

I was thinking that instead of buttercream, the rosewater filling could be made with cream cheese just to tone down the sweetness a bit.

But I would love to hear any other (read: more imaginative) suggestions that you might have?

Are the pistachios in the cake itself... or just part of the filling?

They are part of the filling and on my naked/semi naked cakes (which this one will be) I use them on top of the cake as well.

Roasted Pumpkin seeds or sunflower seeds? Not even sure if this would work but right now it was all I could think of. Maybe others here will have some suggestions. Good luck!!

I love white chocolate and champagne filling and since this is a wedding cake it might be a good choice ; )

Otherwise you could do lavender flavored white ganache or even toasted basil (I know sounds weired but honestly try it!). 

Nuts are tricky in general as allergies are on the rise and with so many guest to cater for like at a wedding you'll bump into problems (not you personally as you just provide and the bride will be aware of the nuts, but the guests).

You could also pair it with a curd...maybe passion fruit...to cut down the sweetness . ..
