Hi I am wanting to make this cake but I do not know how to do the middle tier ...is it a stencil or what? And more important, where can I buy it? Thank you

Wow, I think it is all hand cut.  The reason being that most stencils I have seen or used suit a cake with a max height of 10cm and the middle tier is a double height.  The other thing is if you look at the joins you can see that they are all small pieces stuck together.  The thinner string-like pieces look like that are made with an extruder. I hope you have charged a small fortune, it will take forever to do.

no I don't think it's a stencil -- it's just a gorgeous geometric art deco pattern cut out of fondant pieces -- I would think that some of it is piped but with all that cut fringe on the bottom tier -- I'd wager the fine lines on the art deco tier is also cut fondant -- extruded one way or another -- but it could be piped --

since it's a square tier it's easier to make all those fondant placements -- can let them dry a bit so they don't stretch before you apply -- it's a gorgeous cake--

you might could use candy clay but I can't remember if candy clay takes to being painted with the gold paint? but the candy clay won't stretch out so that's a nice feature to have in your corner for an extensively pieced together decor like this --

fwiw -- not many if any corners are mitered but there are some competing angles joined together -- So to get that all nice & even-- overlap the two sections and make one cut through them both and your angles and cuts will join seamlessly --

i would love to see your work please update if you can -- best to you
