Pillsbury Cake Mix Didn't Rise Well

I baked a 9 x 13 sheet cake last night. This is my first try using Pillsbury (got them on sale .73) and it barely rose 1 inch. This is a freebie cake so I wasn't concerned with making it a full 2 inches so I only used 1 cake mix. In the past, my cakes have always rose around 1 1/2 inches using one cake mix (DH or BC). I am wondering if it was something I did wrong, maybe a bad cake mix, or just a fluke. I used my bake even strips and cooked it at 325 instead of 350. I guess now I should torte it and fill it with BC or bake another layer, it is pitiful, LOL!!


Anyone have this happen or have any idea what went wrong? icon_eek.gif

I just got a bunch on sale too ($.65) I baked a couple of 9X13 cakes and noticed the same thing. The second one I baked I ended up doubling and it barely rose over the top of the 2" pan. Maybe it is just the nature of the mix! They tasted good though! icon_biggrin.gif

Philsbury does not make as much batter as DH. So it may not have been that the mix didn't rise enough, there just wasn't that much mix.

I have found that Philsbury and BC make between 4-5 cups of batter. DH mixes make from 5 to 6 cups depending on the flavor.

I alway use DH, and for the 13x9 I use a cake mix and a half and it rises well above the cake pan. You should use around 7 cups of batter in the 13x9 to get a good 2 inch cake.

Thanks guys, I was sure I had done something wrong. I hope its tasty at least, I didn't have to level it as it baked up nice and level, just too short. I didn't measure my batter this time but now that I think about it, I am sure it wasn't as much as I normally put in it because the cake pan I think wasn't even half full. I do normally use 1.5 cake mixes when I am getting paid (very seldom) but for most family and friends I just use one cake mix. I think I do use DH most often as that is what I have in my pantry now. Lesson learned, measure batter or stick to DH unless I want to use 2 Pillsbury cake mixes.
