I usually just do a 4 eggs 8 sugar, 8  flour, 8 butter 2 tsp baking powder as though I was making a victora sponge and do three lots to get the 6 cakes. Tastes ok but not fab. But what recipe does you use when making a rainbow cake? Thanks

I did a rainbow cake using Woodland Bakery's white cake recipe and was really happy with it, took the gel colors really well, tasted great.  I did the recipe twice with 3 8" pans and had a lot of cake left over after leveling.  If I were to do it again, I'd probably use 6 6" pans since the cake is so tall anyway.

You can always add citrus zest or vanilla bean

Thanks ill have a look for that recipe , last one I made was quite tall aswell. I use the sugarfalir colours.

I will try adding some vanilla next time that Jedi.
