
I confess, I love the frozen Pepperidge Farm cakes. They remind me of special occasions as a child. Yesterday, I accidentally duplicated the taste.
I had some plain Mock Bettercreme (from this site) left over from filling for a wedding cake so decided to make it chocolate by adding three tablespoons of cocoa powder and rewhipping it since it had been in the fridge a couple of days. I had a small WASC layer that I thawed out. I filled and frosted with the mock bettercreme but it was a little soft from sitting out about 30 minutes in a hot kitchen, so put it in the freezer to firm up while we ate dinner. I forgot about it until after the kids were in bed and I was cleaning up, so it was nearly frozen, but I cut and ate a piece anyway.
Oh the memories.
It was delicious, of course, and tasted just like a Golden Layers cake with chocolate frosting. Especially still frozen. It was delightful.
I just thought I would share. It made me happy, and I'll be repeating this happy accident.
