I need a 1/4 c for a biscotti recipe. What can I sub? Water? HELP!! TIA!

How about some really strong coffee and add some rum?

Don't know if this would help, if you have the ingredients or if it would even work, but I would think if you mixed strong hot coffee with enough non-dairy dry creamer (like Coffeemate) to thicken it up, it might be close......

I found this, it sounds like it may work:
cup of Water
1 cup of Brown Sugar
4 tsp. Instant Coffee
1 cup of Rum
4 tsp. Vanilla Extract

You'll have to ratio it to proportion you need but it should work.

I'd probably try making some simple syrup and adding double-strength instant coffee. If the alcohol is important to the recipe, you could probably go with either the rum as suggested above....or vodka. There were a lot of home-made liquer recipes floating around a while back, and they mostly used vodka.

Found something non alcoholic
For 2 tablespoons Kahlua, coffee, or chocolate-flavored liqueur, substitute 1/2 to 1 teaspoon chocolate extract plus 1/2 to 1 teaspoon instant coffee in 2 tablespoons water.
