How Do You Keep The Cupcakes Flat

Every time I make cupcakes which is a lot, they always rise funny like to the side or create a big bump in the middle! I need advice

To make them all uniform try using a ice cream scoop and only fill the liners about 3/4 full. With the doming (bump), it might be that the oven is too hot, lower it by a few degrees. I bake mine at home at 325 at work our ovens are at set at 375 continuously. Also see if your oven is sitting level. HTH, happy baking!

The only reason batter could rise to the side is:
1. if you have a convection oven and the fan is too strong for a light batter
2. your oven is not level
A big bump in the middle can be; too much egg, cold batter, or your oven temp. is too high so the sides set long before the center of the cupcake sets....so it bumps upward when completing the bake.

AMake sure all your ingredients are at room temperature and fill your cupcakes 2/3 full with batter. Lower your oven temp to 325.
