
I've seen some recipes with baking powder and some without. I usually make them with the baking powder and use a press, but I know they will spread less without the addition of baking powder. I am wondering if anyone has made them without and what the texture is? What does baking powder do texture-wise in a cookie? would these be a good rolled cookie? With/without baking powder?

I never use baking powder in spritz cookies. They are not supposed to spread or raise significantly.
The texture should be quite firm and cross when they are finished. They are not supposed to be light and airy :-)
Can't say anything about rolled cookies though.
