
AAfternoon everyone!!
I have tried over 15 different buttercream recipe variations over the years, and I have one recipe that a absolutely love, and that my clients rave almost ( it is almost pure butter), however it is terrible for covering cakes. There are tons of air bubbles. I have another recipe that goes beautifully onto my wedding cakes and other cake orders, however I think it tastes terrible. So, I am wondering, does anyone have a buttercream recipe they use that tastes great and looks great.

Hi Tracey - I use the following recipe and it is always good
250 Grams butter softened
550 grams icing sugar sifted
1 tsp Vanilla
1-2 TBSp water
Mix butter until it is pale in colour
Add 1/3 - 1/2 icing sugar and mix on low speed ( add flavouring if required)
Add remainder of sugar and when it is incorporated scape deown the bow and add the vanilla
increase the speed to high and mix untill, light and fluffy
Add Water and mix for 5 mins
Colour as required with gell paste
This is a lovely stable recipe that crusts perfectly. Keep in fridge for up to 2 weeks but you will need to re beat it when you remove it from teh fridge
