
Hi All! I have been using a american buttercream which is what my customers are used to. I have recently made a swiss meringue and I love it and I have been sending out sample cupcakes with it and people are really liking it. I am going to try and start using the swiss meringue more and the ABC less, but I have a question.... If I ice my cake in the swiss meringue will fondant and gumpaste decorations stay on it? I am making a big birthday cake with zebra stripes on one tier and polka dots on another, and then small daisy gumpaste flowers, if I ice the cake and put it in the fridge to harden then apply the zebra stripes, dots, and daisys while it is still cold will they fall off or slide down the cake once the swiss meringue comes back to room temp? Also what is the best way to color the swiss meringue?

Nope, they'll be fine. I only offer SMBC, so I don't know how your ABC works. Make sure they're not too thick, of course. As far as coloring it, I don't go further than pastel colors. I know some people do successfully I suppose, but it kind of turns my stomach to think of adding a bunch of color to that beautiful icing. :D

Awesome thank you for the help I appreciate it ;) I cant wait to try it out on my cousins daughters first birthday cake.... hopefully she will let me use the swiss meringue instead of the ABC... I should be able to use what I want since its going to be a cake for her gift, lol ;)
