Can I Freeze Mud Cake Covered In Ganache And Fondant

AI am making a choc mud cake and a caramel mudcake for my step daughters wedding cake.
i have already made the cakes as i was told i can freeze them. Since i will be transporting them via a 2 hr plane trip in about a month i wanted to get them ganached and covered in fondant before i freeze them.
Can anyone tell me if I can do this or would that effect the cake when I defrosted Them ?

Yes you can freeze a cake iced in fondant. Frozen fondant can develop moisture beads on the surface as it defrosts and so should be defrosted slowly in a cool, air-conditioned room and inside a cardboard box - not a sealed plastic container. Also make sure the cakes are touched until dry as you'll leave fingerprints.
Personally, I would freeze the cakes uniced and defrost a day or 2 before travelling and ice then, but timing may be an issue for you...

AThank you so much ladies. Bluehue I love reading your responses. So detailed thank you . I have put them in the freezer and will ganache them tomorrow. I can do that when they are frozen can't i? And stick them back in before they defrost ? Bugger maybe I should get them out before they freeze

AOops too late they have partly frozen already. This cake has me so stressed
Can some one give me a time line for what I need to do and how long I need to allow lol

I can do that when they are frozen can't i? No, leave them on the bench still wrapped to thaw overnight - then they will be ready to ganache.... And stick them back in before they defrost ? No...honestly, once ganached they dont need to go back in the fridge ....let alone the freezer....Never put amud cake in the fridge...the cool air will dry it out. Bugger maybe I should get them out before they freeze ...Yes,take it out of the freezer.. just sit on the bench with a fly net over it and all will be good.

AThank u again for your help. Once I have ganached them how long can they last out of the freezer? The wedding isn't until may 4 th. I'm guessing they are like other food where you can't re freeze once they have been frozen to transport them ?
