I usually do cream cheese filling for RV but this bride wants me to suggest a gourmet filling. Any ideas would be appreciated. The cake will be frosted in Whipped cream.

There is always ganache. I personally like to add a ton of vanilla bean paste to my cream cheese icing when I fill RV cakes. It is a wonderful flavor and I love seeing the little bean specks.

What about a soft caramel or salted caramel? I had a RV cupcake with caramel filling and cream cheese frosting and it was delicious! I personally haven't made it that way because I like the original RV with cream cheese frosting so much, but it's an option.


I frequently use white chocolate cream - it is actually my most requested with RV. Candied ginger added to the white chocolate cream is delicious with RV if someone is looking for something a little more exotic. Others fillings I have done are a cream cheese or white chocolate cream with lemon or orange zest.

I can do ganache and caramel fillings but I have never heard of White Chocolate cream.

The one that I have found tastes and hold up the best, is so incredibly easy. Here it is:
1 (3.4 oz) box instant white chocolate pudding mix (use jello brand name, not generic)
1 1/2 cup heavy whipping cream
2 Tbsp very finely grated white chocolate (optional)
Whip pudding mix and cream together until mixture becomes very thick. Fold in grated white chocolate.


Cannoli filling is typically ricotta cheese lightly sweetened with candied citrus and mini chocolate chips mixed in. I gave this tip on another thread, but make sure you use a good quality whole milk ricotta and strain it at least two days before you mix it with the other ingredients. Ricotta can get quite watery if you don't strain it first.
