
I'm in need of a pumpkin cake recipe made from scratch. I took a look at the recipe section and a majority of them are made from cake mixes. While I prefer scratch cakes I'm not opposed to using a mix. My concern is that most of the recipes say "1 box" well as we all know the box size has changed. I'm going to assume that these recipes were developed with the larger 18.25 oz box. I really want to avoid having to buy 2 boxes to make up the ounce differential or do the math to convert. Does anyone have a scratch pumpkin cake recipe that they wouldn't mind sharing?

I use this one for my cupcakes and top with a maple infused buttercream
it is my favorite. Ive never tried another recipe but i dont think i need to. This is also for cupcakes so youll need to adjust to make a cake.
yeilds 24 cupcakes aprx
1 1/2 cups of sugar
3/4 cup of butter softened
3 eggs
1 can pumpkin solid packed (15 oz)
1 cup buttermilk
1 tbs baking powder
2 tsp ground cinnamon
1 1/2 tsp baking soda
1/2 tsp salt
1/4 tsp allspice
1/4 tsp ground nutmeg
1/8 tsp ground ginger
recipe of cream cheese buttercream & add in maple flavoring or maple syrup. (dark maple)
Preheat to 350, line pan with wrappers.
Beat sugar & butter in large bowl with electric mixer at med speed for 3 mins until light and fluffy. Add eggs one at a time, beating well after each addition. Combine Pumpkin & buttermilk in med bowl. mix well. Combine Flour,baking powder,cinnamon, baking soda, salt, all spice,nutmeg and ginger in separate bowl. alternately add flour mixture and pumpkin mixture to butter mixture beating well after each addition. Spoon into tins, and bake 20 mins or until toothpick inserted comes out clean.

Dede Wilson has an awesome pumpkin cake recipe in her wedding cakes book. I made one yesterday from the everyday food site, but haven't tried it yet.
YES! The Dede Wilson recipe is awesome! I made it frequently this time last year. Incredible!

This is my go to pumpkin cake recipe. It makes great cupcakes. It's a Paula Deen recipe, and it's called pumpkin bars, but it's definitely a cake. It's very moist, and very yummy!

I made this pumpkin cake by Crumb Boss the other day and it was the best pumpkin cake I've ever tasted. Everyone at the party loved it. Even the people who aren't big pumpkin fans said it was delicious. I filled it with cinnamon butter-cream like she said she did. She doesn't provide a recipe for that so I just made up my own.
You may want to watch the corresponding video on youtube (the link is on her recipe page) before you make it.
