I tried looking it up online but I got three different answers. 2, 2 1/3 and 2 1/2 which answer is correct?

Depends on your brand of shortening ..

Crisco [manufacturer] cites 192g or 6.77oz per US cup... which is 2.36 cups per pound... 2 1/3 cups is close enough ..
