Hi,

I have been asked to make a small cake on top of a cupcake tower and also desserts for a wedding buffet table. I have been trying to find some ideas for non-refridgerated desserts but can only find slices. Anyone have any ideas please. Thanks!!

You could try cookies, tea cakes, brownies, mini pies

mini cream puffs, mini eclairs, bar type cookies, heart shaped cookies, brownies, small tarts .... You want things that can be put in papers( like cupcake papers), more sanitary. People generally don't want big slices of pies or cakes the smaller items are easy to eat and just enough for tastes after a meal.

by the way you can bake your cream puffs/tart shells/eclairs ahead... freeze and take out day before to thaw and then fill. Brownies same thing. cookies I freeze the raw dough cut into shapes and then bake day before

Cake pops, cake balls, fudge, chocolate dipped oreos (tint white chocolate for other colors), mints, minicupcakes,......

Ditto to everyone else and I would add: mini cheesecakes, chocolate dipped fruit, certain types of mousses or custards.
