Hi All. I have made a rainbow cake and used a buttercream icing. The cake really has no flavour and the buttercream is ridiculously sweet. I would like to add a flavour so it has a surprise punch and wow to it, as I plan to make this for a special occasion and this was my trial run. What would you suggest for a flavour. Flavour could either be the cake or the icing/buttercream. Any suggestion for an easy buttercream/icing that isn't overpowering in sweetness. Welcome your suggestions. Many thanks [/img]

I read somewhere, it may have been here, that you can use powdered drink mix to flavor and color frosting. My daughter's birthday cake had a red buttercream filling and I used Tropical Punch Kool-Aid to give it some color and flavor first and then No Taste Red. It was pretty good and the cake smelled deliciously fruity when I cut it.

If you try this, don't add a whole packet because it will be too strong. I added a little at a time and when the taste was pleasant I stopped and added coloring to my liking.

I would use some lemon or orange zest and extract. The rainbow is a bright object and to me citrus brightens anything!
