

I've always made my royal icing using Wilton Meringue Powder. However, if you want to use real egg whites without worry, buy pastuerized ones. You can find them in the egg section with the liquid eggs. I think Egg Beaters calls theirs "Just Whites" but there are other brands available, including store brand.


I would never use raw egg whites for anyone. You can use powdered egg whites, meringue powder or Wilton Color Flow without any worry.



Powdered egg whites are safe. It is the raw egg whites that can cause sickness.
