Hi there,
Please could someone help me out!
There seems to be lots of different names for the same thing either in the UK or U.S.
Please could someone explain the difference between, Fondant, Ready to Roll Icing (not Royal), Sugar Paste and Gum Paste?
I currently use ready to roll icing to cover my cakes is this the same as fondant? Or are there different types of fondant?
I'm so confused!
Thanks
Lauren

in the UK, Australia and South Africa sugarpaste is what you use to cover your cake. In the US its is called fondant.
In South Africa sugarpaste is sometimes called ready to roll, not sure about the other countries.
Gumpaste is used for flowers and figurines. In the UK Aus and SA we call it flowerpaste.
You can mix gumpaste and sugarpaste 50/50 to give you modelling paste. Great for figurines if you dont want it to dry too fast.
HTH!

Sugar paste, Ready to Roll Icing and fondant are the same, both for covering cakes. Gumpaste is Flower paste, for making flowers.
From Squires Kitchen UK a favourite of mine for supplies. A description of the different icings/pastes/doughs.
Sugar Florist Paste (SFP) / flower paste / gum paste
This is a ready-to-use paste made especially for crafting sugar flowers and leaves. You can roll SFP paper-thin without it breaking, gives a perfectly smooth finish and dries very hard.
SFP is available in white and 20 colours and is ready to use straight from the pack. All of the colours are fully intermixable and you can add SK Professional Food Colours to SFP to create hundreds of different shades and tones to suit your requirements. SFP can be used in conjunction with cutters, moulds, embossers and formers to achieve great results.
Mexican Modelling Paste (MMP) / modelling paste
The perfect ready-made paste for all fine sugar modelling work. The paste is non-sticky which makes it an ideal choice for using with moulds and for making garlands, plaques and all models where a smooth, strong finish is required. It is recommended for use with Patchwork Cutters and for creating frills and drapes on cakes.
Sugarpaste / rolled fondant
This easy to use, ready-to-roll icing is ideal for covering celebration cakes and cookies. Available in a range of colours. Click here for a link to find out how much sugarpaste is recommended to cover different sized cakes.
Sugar Dough
Sugar Dough is ideal for all modelled figures where you require the piece to hold its shape and dry quickly, but still remain soft enough to eat once the cake is cut. It is available in a range of vibrant colours and is non-sticky and easy-to-use, making it a fun, edible material for children to model with.
Cocoform / modelling chocolate / chocolate plastique
A delicious chocolate paste made from pure Belgian chocolate and glucose. Cocoform is a smooth, pliable modelling material for creating figures, flowers and decorations. Cocoform can be mixed 50:50 with sugarpaste or marzipan for an irresistible cake covering.
