I have seen cakes like these in past where sugar objects are floating high able the cake (higher than shown here). can anyone point me to a tutorial?

Those sugar bottles are actually not solid, they are hollow...there is a tutorial on here how to make them.
Anything "suspended" is usually attached to a dowel or wire or something such like, often attached all the way to the base board....and then some sort of decoration is added to camoflauge the support.

I haven't done one of these, but I'd imagine since the dowel is running through the cake and embedded in the cake-board (which would secure the dowel in place, if done properly), the bottle is just placed upside down over the dowel that is sticking out of the cake. As long as it's secured into the cake-board, it wouldn't fall over.



You just turn it upside down and slide it over a dowel. You don't have to attach it - it's long and gravity will hold it down. Hold a dowel in your hand and slide an empty bottle on to it...let go of the bottle (but hold the dowel) and it stays in place - same concept, except for the cake, you secure the dowel into the cake board.
