I am doing a wedding cake in June. They showed me a 3 tier cake using pillars and fresh strawberries on top of each tier. They want a strawberry shortcake with a mascarpone cream filling. Is there an icing that would taste good with that so I can decorate it nice for a wedding cake instead of just having cake and filling showing? The recipe for the cake is called almond-cornmeal pound cake (from Martha Stewart website). I've never made this before and I don't know if BC would work with this cake and filling. Any suggestions would be greatly appreciated!
