

petit fours are basically a mini cake. They are usually square, with some sort of filling. Covered in a ganache type, pourable, icing. Do a search in the galleries, i'm pretty sure there are some pics there.

what are petite fore cakes and how do you make them? also is there anywhere i could see what they look like. thanks
They are tiny cakes that can be cut with cookie cutters in different shapes, then covered with pour icing... which is icing very thin poured over it. Then you can do some simple decorations on them...

petit fours are indeed a pain. to make them slightly less painful to ice (poured liquid fondant in several layers), you can first cover them with marzipan or almond paste or even rolled fondant (though not tasty) -- basically you roll out the marzipan to cover the cake before cutting into pieces, so that each of your pieces has a smooth top. you should also be using a very dense cake, to minimize crumbs.
