Marshmallow Frosting That Tastes Like Marshmallows?

Hi, I want to make Smores cupcakes, and have found a few different variations of the marshmallow frosting or marshmallow filling in these recipes. However, last time I tried to make a smores flavored cake, it turned out pathetic...so I am sticking with my personal chocolate cake recipe and making a graham cracker crust, but I am stuck on the frosting (or filling, I don't care which one, as long as it tastes marshmallow-ey. I used a marshmallow fluff based recipe last time, but saw a recipe that is basically a 7 minute frosting. Anyone made a frosting that tastes like marshmallow they can reccommend?

Why not make a small batch of homemade marshmallows and apply it before it sets. Homemade marshmallows are easy to make (if you have a stand mixer) and taste fabulous.

This is the one I was tentatively planning on using, just not sure how marshmallowey it was going to taste, seems more meringue-ey....guess I'll stick with it.

7 minute frosting tastes so tummy, and yes it has a marshmallow-y taste.. I make it with a pineapple easy cake.. Now i must get up and make that..

What about using marshmallow cream?

Or mixing some marshmallow cream in with vanilla icing (or buttercream or whatever you're using?) icon_smile.gif

Or use flavoring oil, like this:

I use this one also and everyone loves it. I use the graham cracker crust recipe that goes with it but use my own choc. cake recipe.

For the 7 minute frosting if you use the recipe that calls for corn syrup then it definitely tastes like marshmallows. The more corn syrup the closer to marshmallows. It's simple and easy to make. Go for it!

I made a batch of IMBC yesterday (omg!!! to DIE for!!) anyway, at the stage before you start adding the butter, right after you have added the hot syrup and beat it for 15 minutes, it tastes JUST like marshmallow!! As a matter of fact, i wouldn't see why you couldnt add some vanilla flavoring and maybe just a very small amount of butter ( so it wont be AS sticky to work with) but of course, not nearly the amount used when making the actual batch of imbc, and just use it like that.

oh by the way, I DID add 1-2 T of corn syrup in with my sugar and water before I started boiling it.
