Does anyone have a good recipe for a Cannoli Cream filling? I need one that's smooth and will hold up to the weight of a stacked cake. Any thoughts?

I would mix mascarpone, ricotta, chopped pistachios, mini chocolate chips, a touch of almond extract and enough powdered sugar to get the consistency you want.

This one from Emeril Lagasse sounds really good, but I don't know if it is of a consistency that would stand up as filling. Maybe if you added extra powdered sugar to it, huh. http://www.foodnetwork.com/recipes/emeril-live/cannoli-recipe/index.html

Oh, I almost forgot...it was rated 4 stars!

I'm sorry I don't have a recipe for you, but see if you can find one that has a a cooked custard, which is then cooled and then mixed into ricotta. Also it would have almond extract and you can put mini chocolate chips if you like. My mom used to make one like that and she always used it as a filling in cassata cake. It was the best canolli filling I have ever eaten. I miss it.
