Hey all! I am new to this site and must admit it is totally addictive!!
im looking for the perfect vanilla cupcake recipe. cupcakes that are moist and airy at the same time. I have tried manyy recipes in the past 3 months and still havent come across that one recipe i would want to stick with! Any help would be appreciated icon_smile.gif

I use Martha Stewarts recipe and it has never failed me! HTH


Vanilla Cupcakes

Ingredients
Makes about 3 dozen.

4 1/2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 1/4 teaspoons salt
1 cup plus 2 tablespoons (2 1/4 sticks) unsalted butter, softened
2 1/4 cups sugar
6 large eggs
1 tablespoon pure vanilla extract
1 1/4 cups milk
Directions
1.Preheat oven to 350 degrees. Line 2 standard muffin tins with paper liners. Whisk together flour, baking powder, and salt.
2.With an electric mixer on medium-high speed, beat butter and sugar until pale and fluffy, about 4 minutes. Mix in the eggs, one at a time, scraping down sides of bowl as needed, until well blended. Mix in vanilla.
3.Add flour mixture in three batches, alternating with milk in two batches, beating until combined after each. Divide batter evenly among prepared muffin tins. Bake, rotating tins halfway through, until tops spring back when lightly touched, about 20 minutes. Let cool in tins on wire racks.

This recipe has a butter flavor, so I'm not sure if it's exactly what you're looking for, but the texture is amazing. I love how light and airy it is!!

I've recently started using this recipe. I usually get about 44 cupcakes out of this recipe or 24 cupcakes and 1 loaf cake.

Recipe is as follows:

250gr Butter (Softened)
2 Cups Castor Sugar
2 Teaspoons Vanilla Essence
4 Extra Large Eggs
3 Cups Self-Raising Flour
1 Cup Milk

Put all ingredients into mixer and beat until white, it takes about 20 minutes. Bake in a preheated oven at 180 degrees Celsius for about 15 minutes. Baking time depends on your oven.

I use this recipe for loaf cakes as well. The texture is light and moist without being doughy.
