What Does Red Velvet Taste Like?

So I just made my first batch of red velvet cupcakes with cream cheese icing. I've never had red velvet before...so....what is it supposed to taste like?

I personally think it has no real flavor and don't really care for it... icon_lol.gif but everyone else seems to LOVE it... icon_rolleyes.gif

Red food coloring! I can't stand them. They are a mild slightly cocoa cupcake with a ton of red food coloring and hint of vinegar. Bluck. Plus I hate how my hands are stained for days after baking them.

Give me chocolate cupcakes any day of the week. Then again hold the cupcake and just give me chocolate. That works too!

The most poetic way I've heard it is "like yellow cake kissed with cocoa". It should be slightly chocolaty and you should not be able to taste food coloring.

I had also heard many good things about red velvet on TV (I'm in Canada and had never seen it here) so I dug up a recipe and tried it I was not impressed after I did a little research I found that several bakers were having issues with the strange taste the red food color left behind. In the end to me it tastes like a bland chocolate cake artificially colored to add some pizzazz. I like the cream cheese icing but really don't get the hype about red velvet cake. BTW during my research I found that the original version of this cake got its color naturally with beet juice tried that recipe as well, no better just no strange dye taste and no red color since beet juice isn't strong enough to over power the brown from the chocolate.

I don't taste the red food coloring. It just tastes like chocolate cake. Guess its right then!
