
My nine month old nephew, who we suspected was allergic to milk, just got back from an allergen test. He is allergic to both milk and soy. So he cannot have milk, cheese, ice cream, anything processed, most breads, etc, etc. But it breaks my heart to think that he won't get to have a birthday cake for his first birthday! Does anyone have any suggestions or a recipe for a cake that he won't have a reaction to? All the alternatives that I can think of are out. Cookie cakes, cheese cake, all have milk!

Can he have rice?
I've substituted rice milk for regular milk in recipes and it works just fine!

you can use rice milk or coconut milk -
watch out for the soy allergy - you cannot use vegetable oil or vegetable shortening for the cake or frosting. Canola oil and spectrum shortening can be sub'd.

This is my favorite cake, and like cupcakemkr said you can substitute for another oil (I had to make it with olive oil once...suprisingly tasted okay)

My FIL has a milk allergy. For easter I was able to make him chocolate cupcakes, I use the hershey recipe, just changed the milk to rice milk. It did not affect the recipe at all. They were the same as if I had used regular milk. The rice milk is really good. It has a sweet taste, not nasty at all.
For the frosting, I used crisco, only because I couldn't find a stick vegan margarine. And I used the rice milk as my liquid.

Crisco has soy in it.
Tiffany - for future reference, Fleishmans UNsalted margarine is dairy free - itdoes have soy though. I use this for my nephew's dairy free cakes and it works well

Earth Balance makes a dairy free, soy free butter that is fantastic but doesn't hold up quite as well as butter because it's made with palm oil and gets softer faster--I've used it in bc and it takes just a bit more ps and it's fine. Also, coconut milk is a great milk alternative. It's made by So Delicious and it comes in a carton(not the thick, canned stuff). It comes in vanilla, sweetened and unsweetened, is just a bit thicker than whole milk, and is really good on cereal or just in a cup, but is also great for baking. The fat content is a bit higher than rice/almond milk, though. The best thing about it is that they sell it at Kroger!

There are many recipes for milk and soy allergies. You could also use coconut milk or almond milk if you could not use rice milk. but if he is allowed rice then rice milk would be fine. Hi, I have a granddaughter that is having her 1st birthday this weekend. She is milk and soy intolerant and I was wondering if you might have a cake recipe so that she can have cake for her party...not just watch everyone else eat her big cake. I really hope you have an idea for me. She can have almond milk and doesn't have any issues. She also has had olive oil and no reaction. I appreciate any help you may give me. Thanks so much.

You can take any recipe and substitute the milk with rice milk or coconut milk. Sub the butter with palm shortening the easiest one to find is a brand named Spectrum. For every cup of butter replace it with 1 cup of palm shortening plus 2 Tablespoons of water.
