Duncan Hines Carrot Cake-Anyone Extended It?

The Duncan Hines carrot cake has recently arrived in Canada.A friend made it, I tried it & it was yummy. I normally doctor the DH mixes & was wondering if anyone has done this with the carrot cake. As dried carrots are included & they have to be reconstituted by adding water,would this affect the normal cake extender recipe (extra flour,sugar,sour cream etc) & make it too moist?


I am not a big box cake mix person, but did try this one because I had to make a quick cake for my dad and he LOVES carrot cake. I saw it in the store and decided to try it! It was delicious...very good! I haven't made it since, and didn't doctor it, so I should try it again!

I always use this box and extend it. I add in flaked coconut, walnuts and crushed pineapple. I have people say its def better than one of our most respected area restaurants cake! Such a compliment! Paired with a great cream cheese icing, you can't go wrong!

I extend it with the WASC recipe and instead of vanilla and/or almond extract, I add a little orange extract. Have had nothing but compliments with it. The orange brings out the spice in the carrot cake. I then use a cream cheese butter cream recipe with a little orange extract mixed in it too. YUMMY!

I have also extended it by using the WASC extender. Used pineapple/orange juice instead of water. It was really good! I have also made the Ultimate Carrot cake recipe listed on the box that uses canned pineapple. It was also really good with a homemade taste. The WASC produced more batter. I don't see why you couldn't merge the two together...make the WASC but add the extra fruit and nuts in the Ultimate recipe.
