Finally Nailed The Perfect Choc Chip Cookie Recipe!
Baking By cakesdivine Updated 10 Dec 2009 , 2:12pm by cjford

Every CCC recipe I ever tried was always way to crisp and hard once the cookie totally cooled. I tried all the "tips" but always the same result. If I added too much egg the dough was always too thin add more flour to adjust that then they got hard or weren't sweet enough. I must have tried about a 1000 different CCC recipes over the years and always disappointed once the cookies cooled completely. I don't like crispy cookies, I like a chewy soft cookie.
So I tweeked the recipe on the back of the Hershey's Semisweet CC bag in the following manner...
It calls for 3/4 cups equally of lt. brown sugar and granulated sugar. I changed it to 1/2 cup lt. brown sugar, 1/2 cup dk. brown sugar, 1/2 cup granulated sugar and 1/4 cup light corn syrup. Everything else the same as listed for regular CCC, and substituted 1/4 cup of the flour for cocoa powder in the double chocolate choc. chip recipe. I baked them only for 12 minutes and let them sit on the hot cookie sheet for 5 minutes after removing from the oven. THEY WERE PERFECT!

Thanks for sharing - I have never found a chocolate chip cookie recipe I liked (for the same reasons you stated), so I can't wait to try this one!!

Took me forever to tweak my CCC recipe.. isn't it wonderful when you get it just right? Mmmm... makes me want to make some!

I was in the same boat- and finally found a recipe that i loved also!! It calls for oil instead of butter, i think that makes a HUGE difference! I can go find my recipe if anyone wants it, i got it online somewhere.....
Darn you! I want cookies now, and i was doing so well on my diet!

I hope you're adding this to the recipe section!

It's great when you find the right recipe I've got mine perfected and there's a batch in the oven right now.

I have found that the Mary's #1 So Admit it Chocolate Chip Cookie recipe on this website are very good. They are large and flat, but not too hard so as to be difficult to eat after a day. Anyway, is there such a thing as a BAD Chocolate Chip Cookie???

I hope you're adding this to the recipe section!
Yes I did add it! Takes a few days for it to show up however.

OMG! Never has one of my recipes made it on the homepage! This cookie recipe is the first one today! Whoo hoo!

Do share..I strongly believe you can never have to many CCC recipes!

Congrats on your recipe success, I depend on you all for my cookie knowledge
I was lucky enough to be in a discussion about the quest for CCC perfection a while back. Alton Brown did a show called "Three Chips for Sister Marsha" where he of course goes over all of the science behind, puffy, chewy and thin varieties. I swear by his 3 recipes now! Here are the Recipes and a link to the show transcript (which I read because I missed the actual show, and I'm a dork) Anyhow the cookie names tell you the results to expect and they work! I just adore Alton

Thanks! My niece is having open heart surgery tomorrow and she requested some CCC from her favorite Auntie!!! (Yes ME!!! ) I want to make sure that when she wakes up tomorrow she has lots to choose from! Me. personally I love the chewy kind!

Thanks, Andrea - I'll definitely try those! And I hope your niece's surgery goes well, alvarezmom.

I just tried the link for "chewy" and it didn't work...so I used this one instead:

If you want a soft chewy chocolate chip cookie try adding 2 tsp. cornstarch to your recipe. I just love the recipe I use now and it only has brown sugar in mine.

Kerry_Kake - would adding cornstarch be equivalent to using cake flour instead of AP?

actually, *these* are the BEST chewy chocolate chip cookies! hehe! : )

i make many different varieties of cookies for Christmas and these are *still* my fav!!! i'll have to give yours a try this year too...you can never have enough chocolate chips cookies!

Thanks cakesdivine. I'll try your recipe in the future. I have a recipe that I like and to keep the cookies soft and moist I add a small pack of vanilla pudding. I'm always open to trying new tried and true recipes.

I don't think it would be the same thing.
You know when you make Pavlova? It's the adding of the cornstarch that makes the soft chewy center and so it works for the cookies. I got this off of the show "Sugar".
1 cup brown sugar
1 cup margarine
2 eggs
1 tsp. vanilla
2 cups flour
2 tsp. cornstarch
½ tsp. salt
1 tsp. baking soda
2 cups chocolate chips
These are my favorite! I used to use the one with the vanilla pudding in it until I discovered this
