
I notice that some all natural cake mixes have soy lecithin and some gourmet bakeries use it too. It is a natural emulsifier and it's suppose to make the cake more moist.
I have searched a ton, but can not find a cake recipe with it. Does any one have any knowledge about this?
I recently had a cupcake from Crums bake shop and after a lot of poking around I found out that they use on their cakes and frostings. Their cake was amazing!
